It is definitely Fall! In the mornings I am scraping frost off my windows and wearing a scarf and gloves to work. Fresh cool air, yellow leaves on the ground, barren fields…they all account for beautiful Fall days. With Fall comes some of the best fruits and vegetables and nuts…such as pumpkins and apples and walnuts.
In my intermediate level English class we have been discussing foods and quantities. The students worked very hard and put together a recipe book. One recipe in particular embodies our lovely fall weather…Ukrainian Apple Pancakes! I can just imagine enjoying a lovely breakfast of apple pancakes with coffee and watching the sun rise out my deck doors on these cool mornings.
- Egg 1
- Warm water
- Yeast 10 gr (1 packet)
- Flour 2 cups
- Sugar 4-5 tablespoons
- Apple 2-3 (medium sized)
Grate the apples. Mix all ingredients. Let rest 15-20 minutes. Fry in sunflower oil.
Serve with sour cream, jam, or honey.
